Onions Pizza


Don't you just love pizza? Today, I bring to you a small pizza, where the onions have the leading role!






Ingredients:
500 g de flour
1 pack of biological yeast
1 bit of salt
1 egg
Warm water qb.

150 ml tomato sauce (homemade)
150 g mozzarella cheese (grated)
1 onion sliced
100 g sun dried tomatoes, in olive oil
1 jars / can of anchovies
Olive Oil and Oreganos qb

To make the dough, put the flour in a bowl, make a small cavity in the centre and add the egg, the salt and the yeast dissolved in warm water. Mix very well together, adding more warm water if necessary. Leave to rest (and grow!) for about one hour  and a half, covering the bowl with a cloth and put it in a warm place. Once the dough has grown, divide it in small portions to make the pizzas. This recipe is enough for 8 to 10 small pizzas. Extend the dough to the thickness you pretend. I like the fine. In this case I use small tartelette pans, to serve as an entrĂ©e, but the minipizzas can be made in the traditional way.

To prepare the topping, put the onions in a pan with olive oil and fried them slowly until slightly golden. Cover the bottom of the pizza with a thin layer of tomato sauce, and then add the grated mozzarella, the anchovies in small pieces and the sun dried tomatoes also in small pieces. Finally add the previously cooked slices of onions and finish with the oreganos. Take to the oven to bake. They are good either warm or cold!
